Chicken Biryani is a beloved dish cherished by millions of people around the world. And what is a festive gathering without an authentic and royal Chicken Biryani? The rich flavors and tantalizing aromas of Chicken Biryani make it a staple at festive gatherings and everyday meals.

I came up with this recipe when I thought of cooking Chicken Biryani for the first time. I love cooking and I almost learned most of the recipes by trial and error, and to be honest, my brother was my cute little guinea pig. Haha, he would give me genuine feedback on my little food experiments. This mouth-watering recipe is enjoyed by my family and friends. And I remember my father and cousins always turning our Biryani dinner into a Royal Mughlai dinner. I can't wait to share this enticing recipe with you all. So let's dive into the recipe.
Chicken Biryani Recipe
The first step to cooking the perfect Chicken Biryani is to gather all the ingredients. You will need:
Chicken Biryani Masala Ingredients
1½ spoon fennel seeds
½ teaspoon black pepper
7-8 cloves
1 tablespoon cumin
1 tablespoon caraway
1 black cardamom
10-12 green cardamoms
1-2 bay leaves
1-star anise
1 strand of mace
½ teaspoon nutmeg
1 stick cinnamon
Chicken Biryani Masala Preparation
On a low to medium flame dry roast bay leaves, star anise, green and black cardamom, mace, cinnamon, and cloves for 2 mins. Then add cumin, caraway, black pepper, nutmeg, and roast for 2 mins.
Once the mixture cools down, grind until it forms a fine powder.
Store it in an air-tight container as this masala can be used multiple times
Chicken Biryani Marination Ingredients
This preparation serves 3 people
½ kg chicken
1 tablespoon ginger garlic paste
4 onions finely chopped and fried
2 tablespoons prepared chicken biryani masala
3 tablespoons plain yogurt
½ teaspoon salt
½ teaspoon turmeric
1-2 tablespoons Kashmiri chilli powder
Finely chopped coriander
Mint leaves
½ finely chopped tomato
1 tablespoon lemon juice
Mix all these ingredients and set aside for 2 hours. I usually marinate the chicken and keep it in the fridge overnight so that the masala is absorbed completely into the chicken.
Meanwhile, soak 2 cups of Basmati rice for 15 minutes.
Take a pot and add 6 cups of water. Add a small piece of squeezed lemon, salt, and bay leaves to the water. Let the water boil.
Once it starts boiling, strain the soaked basmati rice and add it to the pot of boiling water.
When the rice is cooked, drain the water and let the cooked rice cool down.
Cook Chicken
Set a heavy base pot on a medium-flame stove. Add 3 tablespoons ghee.
Add bay leaves, star anise, cardamom, and nutmeg.
To this add 2 large chopped onions, and fry till golden brown.
Now add the marinated chicken, stir it well, and let it cook for 25-30 minutes
Use a fork to check if the chicken is cooked.
Once the chicken is cooked, spread it all over the pot. Add fried onion, mint leaves, and finely chopped coriander.
Layer the chicken with cooked rice and garnish the rice with fried onions, coriander, and mint leaves.
To make your biryani look alluring, you can also opt for food colors.
Cover the pot with a lid and set it on a low flame for 5-10 minutes.
Tadaa!!! the biryani is ready to serve now. It smells yummy and I'm off to eat.
