Sheera Recipe | Suji Halwa

Here’s a classic Sheera (Sooji Halwa) recipe, which is a popular Indian sweet made from semolina (sooji), ghee, sugar, and flavored with cardamom.

Sheera is a beloved recipe in our home, lovingly prepared by my mother. Both my brother and I absolutely adore it, and it's a staple for every pooja and festival. My mother always adds her creative touch—she smears ghee over the entire plate, spreads the sheera evenly, and then cuts it into small, delightful slices.


And woah!!!! It tastes yum.


Let's dive into the recipe.

Sheera Recipe Ingredients

  • Sooji (semolina) – 1 cup

  • Sugar – ¾ to 1 cup (adjust according to taste)

  • Ghee – 4 to 5 tablespoons

  • Water – 2 cups

  • Milk (optional) – ½ cup (for a richer taste)

  • Cardamom powder – ½ teaspoon

  • Cashews, raisins, and almonds – a handful (optional)

  • Saffron – a few strands (optional)


Step 1: Roast the Sooji:


  • Heat a heavy-bottomed pan and add 2 tablespoons of ghee.

  • Add 1 cup of sooji (semolina) and roast it on low-medium heat, stirring continuously until it turns golden and aromatic. This usually takes about 8-10 minutes. Set aside once done.


Step 2: Prepare the Sugar Syrup:


  • In another pan, heat 2 cups of water. If you're using milk, add ½ cup milk along with the water for a richer texture.

  • Once the mixture starts boiling, add sugar and a pinch of saffron strands (optional). Stir until the sugar dissolves completely.


Step 3: Combine:


  • Gradually add the roasted sooji to the boiling sugar-water mixture, stirring continuously to avoid lumps.

  • Stir well until the sooji absorbs the liquid.


Step 4: Add Ghee and Dry Fruits:


  • Add the remaining ghee (around 2-3 tablespoons) and mix well.

  • Fry the cashews, raisins, and almonds separately in a bit of ghee, and then add them to the sheera.

Step 5: Flavoring, Cooking and Serving


  • Add cardamom powder and mix thoroughly.

  • Cook the mixture for 3-4 minutes, stirring occasionally until the sheera thickens and ghee starts to release from the sides of the pan.

  • Serve hot, garnished with more nuts if you like.
