My mother used to make this bitter gourd recipe twice a month because she strongly believed in its health benefits, particularly for digestion and overall wellness. She knew that bitter gourd wasn’t a favorite for most kids—especially for me and my brother. But she was determined to find a way to make it not just edible but enjoyable for us.

Her recipe was born out of experimentation and love. She tried several techniques to reduce the bitterness, like salting and squeezing the slices.


She eventually discovered that thinly slicing the bitter gourd and frying it with the right combination of spices made it crispy and masked much of the bitterness.


This recipe became a staple in our home, not just for its taste but also for the warmth and effort she put into making something we could enjoy while keeping us healthy. Over time, it turned into a comfort food that we actually looked forward to every couple of weeks!

Karela Fry Recipe


Ingredients


  • Thinly sliced bitter gourd (karela)

  • salt

  • turmeric powder

  • red chili powder

  • oil

  • semolina.

Step-by-step recipe


  • Take the sliced bitter gourd and sprinkle some salt over it. Gently squeeze the slices to reduce their bitterness, then rinse them thoroughly with water.


  • Heat 2 tablespoons of oil in a pan, add the prepared bitter gourd slices, and season with salt, red chili powder, and turmeric.


  • Sprinkle semolina evenly over the slices and fry until they turn crisp and golden brown. Serve hot and enjoy!
