There's something magical about Sundays in our home. The aroma of fermented batter, the sound of dosas sizzling on the tawa, and the touch of banana leaves create a comforting tradition. As kids, my siblings and I would eagerly wait for this breakfast, watching our mother lovingly make set dosas. Even now, this Sunday morning ritual brings our family closer together.
Set Dosa Recipe | Sponge Dosa Recipe
For the Dosa Batter:
2 cups parboiled rice
1 cup regular rice
1 cup urad dal (split black gram)
1/2 cup poha (flattened rice)
1/2 teaspoon fenugreek seeds (methi)
Salt to taste
Water, as needed
Oil or ghee for cooking
Instructions:
Making the Dosa Batter:
Soak Ingredients: Rinse and soak the parboiled rice, regular rice, urad dal, fenugreek seeds, and poha in water for 4-6 hours.
Grind: Drain the soaked ingredients and grind them into a smooth batter, adding water gradually to get the right consistency. The batter should be slightly thick, yet pourable.
Ferment: Transfer the batter to a large bowl, add salt, and mix well. Cover and let it ferment overnight or for about 8-12 hours in a warm place.
Prepare for Cooking: The batter should have risen and become airy after fermentation. Mix it gently.
Cooking the Set Dosas:
Heat the Tawa: Heat a non-stick tawa or a cast iron griddle. Grease it lightly with oil or ghee.
Pour and Shape: Pour a ladleful of batter onto the tawa and spread it lightly to form a small, thick circle. Set dosas are thicker than regular dosas, so avoid spreading too thin.
Cook: Cover with a lid and cook on medium heat until the top is cooked and small holes appear. The dosa should be soft and fluffy.
Serve: Place the dosa on a fresh banana leaf. The warm, earthy aroma of the banana leaf enhances the taste and adds a special touch of tradition.
