Crispy Pakoras: The Perfect Rainy-Day Snack

There's something magical about the aroma of crispy fried pakoras, especially on a rainy day. I'm a huge fan of hot, crunchy onion pakoras served with tomato sauce or pudina chutney. This snack adds a charm to my rainy evenings, making them warm, cozy, and flavorful. I always pair it with a cup of masala chai, Ah hah!! it makes life worth living.

Frying pakoras always takes me back to my childhood when my brother and I would ask Mumma to stuff them in bread with ketchup. This recipe is very simple and can be cooked in minutes, lets straight away get to this recipe.


Crispy Pakoras


Ingredients


For the Batter:

  • 1 cup chickpea flour (besan)

  • 2 tbsp rice flour (for extra crispiness)

  • 1 tsp carom seeds (ajwain)

  • ½ tsp turmeric powder

  • 1 tsp red chili powder

  • 1 tsp salt (adjust to taste)

  • A pinch of baking soda

  • Water (as needed)


For the Filling:


For Frying:

  • Vegetable oil


Instructions


1. Prepare the Batter:In a large bowl, combine the chickpea flour, rice flour, and all the spices (carom seeds, turmeric, chili powder, and salt). Gradually add water and whisk to form a thick, smooth batter. Add a pinch of baking soda right before frying to ensure lightness.


2. Chop the onions:Chop the onions into thin slices.


3. Heat the Oil:Heat oil in a deep pan on medium heat. To test if the oil is ready, drop a tiny bit of batter into the oil. It should sizzle and rise to the surface.


4. Fry the Pakoras:Drop small portions of the batter-coated onion slices into the hot oil, being careful not to overcrowd the pan. Fry until golden brown and crisp, turning occasionally for even cooking. Remove using a slotted spoon and drain on paper towels.


5. Serve Hot:Serve your pakoras with a side of tangy mint chutney, tamarind sauce, or tomato ketchup. Don’t forget the chai!
