Cauliflower fritters are a beloved snack at my home, a go-to recipe that’s always on the table during snack time. It’s one of those dishes that brings out the fun, with my siblings eagerly competing to see who can pile the most fritters onto their plates. The playful tug-of-war over these crispy bites has become a cherished part of our family tradition.
Cauliflower Fritters Recipe Ingredients
1 medium cauliflower, cut into small florets
1 cup all-purpose flour
1/2 cup rice flour (optional, for extra crispiness)
1/2 teaspoon turmeric powder
1 teaspoon chili powder (adjust to taste)
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1/2 teaspoon ginger-garlic paste
1/4 teaspoon carom seeds (ajwain) or cumin seeds
Salt to taste
Water, as needed to make the batter
Oil, for deep frying
Fresh coriander leaves, chopped (for garnish)
Step 1: Prepare the Cauliflower:
Wash the cauliflower florets thoroughly and blanch them in hot water for 2-3 minutes to soften slightly. Drain and let them cool.
Step 2: Make the Batter:
In a mixing bowl, combine the all-purpose flour, rice flour (if using), turmeric powder, chili powder, cumin powder, coriander powder, garam masala, ginger-garlic paste, carom seeds, and salt.
Gradually add water to the mixture, whisking continuously to form a smooth, thick batter. The consistency should be thick enough to coat the cauliflower florets evenly.

Step 3: Coat the Cauliflower:
Dip each cauliflower floret into the batter, ensuring it is fully coated.
Step 4: Fry the Fritters:
Heat oil in a deep frying pan over medium heat. To check if the oil is ready, drop a small amount of batter into the oil; it should sizzle and rise to the top.
Carefully drop the batter-coated cauliflower florets into the hot oil, frying in small batches. Avoid overcrowding the pan.
Fry the fritters until they are golden brown and crispy on all sides, about 3-5 minutes per batch. Use a slotted spoon to remove the fritters and drain them on paper towels to absorb excess oil.
Step 5: Serve:
Transfer the cauliflower fritters to a serving plate. Garnish with chopped coriander leaves.
Enjoy with your favorite dipping sauce, such as mint chutney, ketchup, or a yogurt-based dip.
Tips:
For extra flavor, you can add finely chopped green chilies or fresh herbs to the batter.
Serve immediately for the best taste and crispiness. Reheating may make the fritters lose their crunch.
